Dinner Nachos
Ingredients:
Directions:
- 1 ounce corn chips
- ⅓ cup kidney beans
- 2 tbsp chopped olives
- ¼ cup shredded reduced-fat cheese
- ½ cup shredded lettuce
- ¼ cup chopped tomatoes
- ⅓ cup salsa
- ½ cup greek yogurt
Directions:
- Layer one ounce of corn chips with 1/3 cup kidney beans, 2 tbsp chopped olives and 1/4 cup shredded reduced-fat cheese.
- Bake in oven or toaster oven for about 10 minutes or until all ingredients are hot and cheese is melted.
- Top with 1/2 cup shredded lettuce, 1/4 cup chopped tomatoes, 1/3 cup salsa and 1/2 cup non-fat Greek yogurt.
