Hi! My name is Ro Nambiar and I’m so honored to be a guest writer on Nourish and share a new recipe with everyone! As an active member of the University of Maryland, College Park campus, I am always intrigued by new student organizations. As a food blogger and general foodie, Nourish’s mission statement and goal was something that resonated with me. I’m very excited to to partner with Nourish to provide recipes that highlight how certain health issues that arise during pregnancy can be curbed with specific dietary changes. I can’t wait to continue to work with them to help spread the word of this awesome organization. The recipe I’m sharing today is my Roasted Salmon and Veggies with Honey Mustard Glaze served with Quinoa. This recipe is perfect for any woman that has been diagnosed with gestational diabetes. Gestational diabetes is the condition that some pregnant women face that involves becoming diabetic due to the body not responding to insulin or the body not making enough insulin in general. Maintaining a balanced and healthy diet for women with gestational diabetes is extremely important because it makes managing all the symptoms associated with the condition a lot easier. Any woman who has gestational diabetes should avoid fast food, fried food, sugary drinks and any foods high in starch such as white potatoes and white rice. Some foods that you should maintain in your diet are ample fresh fruit/vegetables, baked fish/chicken, and low sugar yogurt.
